Is olive wood hygienic for cooking?

Olive wood has a naturally tight grain, so bacteria doesn't work its way in the way it can with softer, more porous woods. 

Is olive wood dishwasher safe?

Don't put it in the dishwasher. The heat warps the wood and the detergent strips the natural oils, leaving it dry and prone to cracking. Wash by hand with warm water and mild soap, dry it straight away with a cloth, and it'll outlast most kitchen tools you own.

It also won't hang onto garlic or onion smells the way some cheaper timbers do. Wash and dry properly and there's nothing to worry about.

Do I need to oil my olive wood utensils?

Only when it starts looking a bit pale or dry - usually every couple of months if you're using it often. Rub in a small amount of food-safe mineral oil, let it sit for 20–30 minutes, wipe off what's left.

Where does your olive wood come from?

Portugal - the same groves that supply olive oil production. We use offcuts from pruning rather than felling trees, which keeps the supply chain short and means every piece has slightly different grain and colour depending on the tree it came from.
